Same Customer - Different Projects

Hi All,
We work on several different projects for the same customer eg. We invoice a particular builder but the invoice needs to note which project the invoice is for; or we invoice a strata management company that would like the particular building noted on the invoices (and in most cases, the email contact depends on which building we are working on).
My question is how do we do this when raising an invoice?
Do I need to set up a different Customer for each project with different addresses (and different email addresses)?
Or do I need to note the details of the project in the first line of the invoice as a description?

I realise that I can add a number of contacts to each Customer contact but each invoice goes to different people.
